Separate Prep Zones: Planning a Hygienic Family Kitchen with Stone Counters

Many Pakistani families like to keep raw meat, vegetables and dairy preparation separate — for hygiene, for food safety in hot weather, and for personal and household practice. Good kitchen planning makes this easy, and the right countertop material makes cleaning simple. Here is how to design a zoned kitchen.

Why Plan Separate Zones?

  • Reduces cross-contamination between raw meat and ready-to-eat foods
  • Makes large family cooking efficient, especially during Eid and weddings
  • Helps cooks and helpers follow a clear system
  • Keeps the kitchen organised during busy times

Mapping Your Zones

A typical zoned kitchen includes:

  1. Raw meat and poultry zone — near a sink and the refrigerator.
  2. Vegetable and fruit zone — near a second sink or the other bowl of a double sink.
  3. Cooking zone — around the hob, with heat-resistant counters on both sides.
  4. Dairy and baking zone — a cool surface for dough, roti and desserts.
  5. Serving and clean-up zone — near the dining area and dish storage.

Utensils and Storage

Assign drawers and cabinets to each zone. Colour-coded chopping boards and knives (for example red for meat, green for vegetables, blue for dairy) help everyone follow the system without thinking.

Sinks

A double-bowl sink, or two separate sinks, lets you wash meat in one and vegetables or dishes in the other. In larger kitchens, a small prep sink on the island is very useful.

Choosing Countertops for Each Zone

  • Quartz is non-porous and does not need sealing — ideal for raw meat zones.
  • Dark granite such as Galaxy Black or Tan Brown has low porosity and handles heat beside the hob; seal it regularly.
  • Marble stays cool for dough and pastry but should be kept away from raw meat and acidic foods.
  • Porcelain is non-porous and heat-resistant, excellent around the stove.

Some families use two different countertop colours to mark zones visually — for example white quartz for prep and dark granite for cooking.

Appliances

Plan space for a separate microwave or oven area and, where possible, a dedicated refrigerator shelf or second fridge for raw items. A good exhaust hood keeps smells out of the prep areas.

Small Kitchens Can Be Zoned Too

Even an apartment kitchen can use zones. A peninsula can serve as the meat-prep area, while the main counter handles vegetables and cooking.
